Peach Cobbler Muffins

These muffins are by far my new favourite breakfast, they’re full of flavour and perfectly moist. I’d say the most important part is to fill the liners over 3/4 full so they rise up and get the nice looking muffin tops.

Peach Cobbler Muffins

Makes 2 dozen muffins



  • 3 Cups Flour
  • 1 Tsp Cinnamon
  • 1 Tsp Nutmeg
  • 1 Tsp Salt
  • 1 1/4 Cups Vegetable Oil
  • 3  Eggs
  • 2 Cups White Sugar
  • 3 Cups Chopped Peaches


  • 2/3 Cups Brown Sugar
  • 2/3 Cups Flour
  • 4 Tbsp Butter, Softened
  • 1 Tsp Cinnamon
  • 1 Tsp Nutmeg
  • 1/4 Cup Rolled Oats


  1. Preheat oven to 375 degrees.
  2. Mix the oil, sugar and eggs together in mixer.
  3. In separate bowl mix flour, cinnamon, nutmeg and salt.
  4. Mix the dry mixture into the wet being sure to not over mix it.
  5. Fold in peaches careful not to crush them.
  6. In a separate bowl mix all the ingredients for the topping
  7. Put around a table spoon of the topping on top of the muffin batter.
  8. Bake for 20-25 minutes.
  9. Enjoy!

An important part I’d like to stress it to gently fold the peaches in, don’t mix them in with your mixer. If you do that you’ll end up with purred peaches in the muffins instead of nice chunks which isn’t as tasty.
